<p>Oft hört man, Kaffee würde dem Körper Flüssigkeit entziehen. Laut der Deutschen Gesellschaft für Ernährung (DGE) kommen diese Aussagen von der falschen Interpretation veralteter Studien.<br>Wenn Sie regelmäßig Kaffee trinken gewöhnt sich der Körper daran und Sie können Ihre getrunken Kaffeemenge zu Ihrer täglichen Flüssigkeitsbilanz hinzurechnen.</p>
<p>In Deutschland trinkt jede Person durchschnittlich 1/2 Liter Kaffee pro Tag.<br>Kaffee ist auch deshalb so beliebt, weil er uns wach macht und die Stimmung der sogenannten Morgenmuffel verbessert. Hierfür ist das enthaltene Koffein verantwortlich. Das Koffein benötigt ca. 30 bis 45 Minuten um im Blutkreislauf anzukommen.<br>Die Wirkung hält abhängig vom Alter, Gewicht und dem individuellen Gesundheitszustand durchschnittlich 4 Stunden an. Bei Schwangeren wird Koffein erst nach fast 20 Stunden abgebaut.</p>
<h4>Wie viel Kaffee ist empfehlenswert?</h4>
<p>Koffein ist in geringen Dosen stimulierend für das Herz- und Kreislaufsystem und steigert die Konzentrations- und Leistungsfähigkeit. Bis zu vier Tassen Kaffee täglich sind in der Regel in Ordnung. In vernünftigen Mengen ist Koffein eine echte Wunderwaffe für den Körper.<br>Bei dauerhaft erhöhtem Blutdruck sollten Sie sparsamer Kaffee genießen.</p>
<p>Regelmäßiger Kaffeegenuss kann den geistigen Leistungsabbau im Alter und das Risiko an Depressionen zu erkranken verringern.</p>
<p>Der Koffeingehalt ist je nach Sorte unterschiedlich und ist von mehreren Faktoren abhängig. Hierbei spielen das Röstverfahren, die Kaffeebohne selbst oder die Zubereitung ein Rolle. Arabica-Kaffee enthält beispielsweise dreimal weniger Koffein als Robusta.</p>
<p>Kaffee ist kein Durstlöscher und sollte zudem nicht statt Wasser getrunken werden.</p>
<p>Sie sollten beim Kauf allerdings unbedingt auf die Bohnenqualität und eine schonende Röstung achten.</p>

<p>Kaffee ist eines der aromatischsten Lebensmittel überhaupt. Erst durch das Rösten entfaltet die Kaffeebohne ihre Aromen. Unter Hitzezufuhr finden dabei sehr komplexe, chemische Reaktionen statt. Dadurch setzen sich Zuckerstoffe und Aminosäuren neu zusammen, sodass während der Röstung bis zu 1.000 neue Aromen bzw. chemische Verbindungen entstehen.</p>

<p>Bei der Heißluftröstung wird vorgewärmter Rohkaffee gleichmäßig von sehr heißer Luft (bis 600 °C) umspült. Nach dem Rösten ist eine schlagartige Abkühlung der Bohnen notwendig, um ein Nachrösten zu verhindern. Dieses Verfahren wird insbesondere von der Industrie bevorzugt, denn hier können bis zu 500 kg Rohkaffee in zwei Minuten geröstet werden. Der Nachteil ist die kurze Röstzeit – dadurch gehen Geschmacksstoffe leicht verloren und die Bitterstoffe bleiben oftmals erhalten.</p>

<p>Die Trommelröstung hingegen, ist eine zeitintensive und dadurch kostenintensivere Röstmethode. Der Röstmeister erhitzt die Bohnen auf 200 bis maximal 230 °C, womit die Röstung etwa zwölf bis 20 Minuten dauert. Durch die lange Röstdauer werden Bitterstoffe abgebaut, und die Bohne hat genügend Zeit, ihre eigenen Aromakomplexe zu bilden, die für einen ausgewogenen Geschmack sorgen.</p>

<p>Der <strong>Cinnamon Roast</strong> ist mit der hellste Röstgrad und zeigt eine überaus ausgeprägte Säure bzw. Frucht im Geschmack. Third-Wave-Kaffeetrends beruhen allerdings eher auf der nächsten Stufe, dem <strong>City Roast</strong> Plus, bei der einige Bitterstoffe ins Spiel kommen. Die sogenannte <strong>Französische oder Wiener Röstung</strong> kommt mit einem dominanten Röstgeschmack, bringt Würze und zudem Süße ins Spiel. In dieser Stufe wird beispielsweise typischer norditalienischer Espresso geröstet. Weiter im Süden geht man mit <strong>Dark French</strong> noch einen Röstschritt weiter und sorgt für ausgeprägte Bitter- und Röstnoten. Spricht man von einer <strong>Espresso-Röstung</strong> oder meint die <strong>Italienische Röstung</strong>, bewegt sich die Kaffeebohne meist zwischen diesen beiden Polen. Die <strong>Spanische Röstung</strong> ist das obere Ende der Skala und schmeckt fast verbrannt. Da aber die Spanier ihren Kaffee sowieso stark verdünnt lieben, hat auch diese Stufe ihre Fans.</p>

<p>Die Kaffeepflanze ist sehr sensibel und wächst nur unter bestimmten klimatischen Bedingungen. So wird Kaffee nur in Ländern rund um den Äquator, im sogenannten „Kaffeegürtel“ angebaut. Ursprünglich stammt die Kaffee-Pflanze aus Äthiopien.</p>
<p>Die geographische Lage, ein ausgeglichenes Klima ohne extreme Temperaturen, Schutz vor Sonne und Wind sind ebenso wichtig für die Kaffeepflanze, wie ausreichend Niederschlag und eine optimale Bodenbeschaffenheit.</p>
<p>Die zwei bedeutendsten Kaffeearten Arabica und Robusta unterscheiden sich sehr stark voneinander. So wächst Arabica vor allem in Höhen zwischen 600 und 2.000 Metern, wohingegen Robusta in tieferen Lagen, auf bis zu 900 Metern, gedeiht.</p>
<p><strong>Schon gewusst?</strong></p>
<p>Kaffee wurde der Legende nach zufällig von einem äthiopischen Hirten entdeckt, dessen Ziege nach dem Verzehr der roten Kaffeekirschen aufgedreht umhersprang.</p>
